Hello! My name is Noriko, a Japanese resident living in Amsterdam. I am a yoga instructor and have cooked plant-based dishes for yoga seminars. I am not vegan but aware of the health benefits of a vegan diet. I will guide you through the process step by step, and share some tips you won’t find in any recipe books.

The idea for this plant-based cooking workshop came from my experience working in a Japanese restaurant where there were no vegan options. Even though Japan has amazing plant-based dishes, they’re hard to find abroad. So, let’s cook together!

The explanation of the key factors of healthy Japanese cuisine was informative and gave me a new point of view on another culture through food. As she described, it’s food anthropology! My Motivation

When I moved from Japan to the Netherlands, I became very curious about European food. I enjoyed discovering the rich variety of dairy products and cooking European dishes. However, I noticed that to enhance flavors, more butter, cream, and oil were often added. While these ingredients create rich flavors, they also lead to high calorie intake! This realization made me reflect on the characteristics of Japanese cuisine, which uses different methods to make food tastier.

I learned the basics of cooking from my mother. During her youth, people used only local and seasonal ingredients, cooking with traditional methods. But the food scene changed drastically from the 1960s. Many foreign foods like pizza, donuts, cheese, and mayonnaise were introduced, and we started to hear new health terms such as diabetes, cholesterol, and high blood pressure.

Eating is one of our essential physical activities, making it an important subject for yogis. I believe that home cooking is key to staying healthy. It would be my great pleasure if my experience and knowledge as a yogi and an immigrant can help make your culinary life healthier and more joyful!
